Cranberry & Hibiscus
50g
dried hibiscus flowers
15g citric acid
1.5 kg sugar
75ml concentrated cranberry juice
350ml boiling water
Pour boiling water over dried hibiscus flowers and leave to
macerate for 10 minutes. Strain liquor and pour over sugar
and citric acid in a mixing bowl. Stir until all the sugar
is dissolved adding more hot water if necessary. Leave to
cool, then add cranberry concentrate.
